Welcome to MJ’s Kitchen, & today we’re making Vegetable Biryani in our kitchen. let’s start. to make vegetable biryani we need: boiled rice 750 gram Sella Rice, soaked in water for 1½ hour then boiled adding 1 tbsp Salt. rice are not fully cooked, around 75%. 2 Medium Onions (sliced), 1½ cup Yogurt (whisked), ½ cup Oil, few drops of Kewera Essence, ¼ tsp Yellow Food Color, 1 medium sized Capsicum (cut in small cubes), 2 cup Carrots, 2 cup Green Peas, 2 cup Potatoes, 1 tsp Turmeric, 1½ tsp Salt, ¼ tsp Cardamom Powder, 1 tsp Red Pepper Flakes, 1 tsp Red Pepper Powder, 1 tsp Garam Masala Powder, 1 tsp Coriander seeds (roasted & crushed), 4 Green Chilies (julienne cut), 1 Lemon (sliced), Fresh Coriander (chopped), 1 tbsp Whole Garam Masala 1 tbsp Ginger Garlic Paste, & 10 Prunes. turn on the flame & add oil to the pan & whole garam masala fry this for one minute. now adding sliced onion. fry the onion until light brown. add ginger garlic paste & fry it lightly. now add vegetables: potato, peas & carrot fry these on high flame for 2 minutes. add all dry spices add ½ glass water. cover & let it cook for 5~7 minutes at medium flame. vegetables are half done & well fried. now add capsicum prunes, whisked yogurt, cover it again for 2~3 minutes. now adding green chili, lemon & fresh coriander boiled rice few drops of Kewera Essence yellow food color (mixed with water). cover & let it cook at medium flame for 5 minutes then simmer for 10 minutes at low flame. 10 minutes are done, turn of the flame. our delicious vegetable biryani is ready let’s transfer it to serving plate.
